Thai beef salad for large groups (serves 100)

Planning a Thailand-themed lunch or evening to promote
BMS in your church? Here’s a recipe, suitable for large
groups, that reflects Thai cuisine and will tickle the tastebuds
of discerning churchgoers everywhere...

 

Ingredients
For the marinade
Garlic powder............ 45g
Soy sauce............. 275ml
Ground ginger............ 45g
Cayenne pepper............ 1 tbsp
Ground black pepper............ 1 tbsp
For main recipe
Beef/steak, cut into strips............ 11.25 kg
White cabbage, shredded............ 3.6kg
Iceberg lettuce, shredded............ 3.6kg
Green and red medium sized peppers,
thinly sliced............ 1.8kg
Carrot, shredded............ 900g
Onion, shredded............ 900g
Beef stock............ 900ml
Garlic powder............ 45g
Soy sauce............ 275ml
Ground ginger............ 45g
Cayenne pepper............ 1 tbsp
Ground black pepper............ 1 tbsp
Vegetable oil............ 275ml
Ready-made spring rolls x200 (optional)


Method

1 For the marinade: combine the garlic, soy sauce, ginger, blackpepper and cayenne pepper with the beef strips. Marinate in thefridge for at least 30 minutes

2 Combine the shredded cabbage, lettuce, peppers, carrots, andonion. Lay on the bottom of large serving dishes.

3 Combine beef stock, garlic powder, soy sauce, ginger, black pepper,cayenne pepper and vegetable oil – this is your sauce.

4 Remove strips of beef from marinade and grill until brown. Note:the internal temperature of the beef must reach 145 F or higher for15 seconds.

5 Lay warm beef strips over salad, and pour sauce all over. Placecooked spring rolls around the edges (optional).
